This baking steel is designed for use in the Ooni 3 and 12 inch Koda. The steel is ideal for cooking on with lower temperature cooks and also at higher temperature cooks with the use of the existing stone.
On lower temperature cooks, the existing stone may not store enough heat for your desired cook, this is where the baking steel comes into play as it can store and transmit more heat energy into the dough. When used at high heat such as 400c, the steel will be too efficient and may burn the base of your dough. By placing the steel beneath the stone, you will not only add more thermal mass into the oven which will help maintain steady temperatures, but you will also maintain the heat in the stone as it conducts the heat from the steel. The steel will also help the stone recover it’s temperature, ready for the next pizza.
Flame guards are also available for the Ooni 3
Please note that when used at high temperatures, the seasoning can burn off and will have to be seasoned again if used in the home oven.Â
